Bran Muffins

1¼ cups flour

½ cup sugar

1 TB sugar

¼ tsp salt

2 cups All Bran cereal

1¼ cups low fat milk

1 egg

¼ cup canola oil

Whisk liquid ingredients and eggs in mixing bowl. Add to all bran and let stand about 5 minutes or until cereal softens.

Combine dry ingredients and add at once to liquid ingredients stirring just until dry ingredients are moistened. Spoon batter into greased muffin tins or paper muffin cups. Bake at 400 degrees about 20 minutes or until lightly browned. Yields 12 muffins.

For muffins with reduced calories, fat and cholesterol: Use 2 TB sugar,

2 TB oil, replace low fat milk with skim milk and substitute 2 egg whites for 1 egg.
