Double Chocolate Muffins

6 T. Cocoa

2 T. Shortening

1 3/4 Flour

1 tsp. Baking Soda

1/4 tsp. Salt

1 cup Buttermilk

1 tsp. Vanilla

1 stick of softened butter

1 cup brown sugar

1 cup buttermilk

1 egg

1 cup chocolate chips

Beat butter and sugar in a bowl till combined. Then add cocoa, shortening, vanilla, soda, salt, egg and milk. Add flour and buttermilk a little at a time while mixing. Then add chocolate chips. Pour into a greased muffin pan or cupcake papers. Bake at 350 degrees for 25-30 minutes. Makes about 12-15 muffins.

Recipe Note: If you don't have buttermilk on hand. Mix one cup of milk and one Tbsp. of lemon juice in a bowl, stir it and then let it set for about 5 minutes before using it and you have buttermilk.
