Applesauce Bread

3 1/2 cups water 


2 Tablespoons Dough Enhancer 


1/2 cup powdered milk 


1 1/2 cup applesauce 


1/2 cup honey or maple syrup 


3 Tbsp. Saf Instant Yeast

4 cups freshly ground whole wheat flour 


1/4 cup gluten 


3 apples, cubed or shredded 


1/2 cup oil 


2 cups pecans, chopped

cups freshly ground flour 


Mix all ingredients except flour. Add flour and knead 1 minute. Let rise in bowl for a full half hour. Add: 



4 eggs

2 Tbsp. salt

enough flour to clean side bowl 6-8 cups 


Knead on speed 1 for 5 minutes. 

Dough should be very soft and manageable. If dough is too stiff, sprinkle water on top while it is kneading. Stiff dough produces heavy, dry bread. Let rise till double. Bake at 350 degrees for 18-20 minutes for rolls, 30-35 minutes for bread.
