Gnochi

The only gnocchi recipe that I've tried and it was great!

2 TB butter
1 clove garlic, finely chopped
1 1/2 cups tomatoes, diced
1 TB finely chopped fresh basil
1/4 cup freshly shredded parmesan cheese
Mozzarella to taste

Heat salted water in saucepan until boiling. Add premade gnochi. Cook 2 to 3 minutes or until gnocchi floats. drain.
In a nonstick skillet melt butter over medium heat. Add garlic. Cook, stirring constantly for 1 minute. Add cooked gnochi, tomatoes and basil. Cook, stirring often, until gnochi is lightly browned. Sprinkle with parmesan cheese and mozzarella and keep on low heat until melted, stirring.

Note: Gnochi is a potato type pasta. I found mine at Target in the refrigerator section, made by Archer Farms.
