Honey Mustard Spinach Salad

SAA Favorites


1 bag baby spinach

1 c mozzarella cheese

1/3-1/2 c cottage cheese, drained well

craisins, to taste

8 slices bacon, cooked and crumbled

½ red onion, sliced or diced to your preference

Toss salad ingredients


Dressing:

¼ c honey

¼ c apple cider vinegar

1/8 c olive oil

2 T grated onion

2 tsp salt

1 tsp dry mustard

2 T poppy seeds

Blend honey, apple cider vinegar, olive oil, onion, salt, and dry mustard in blender. Stir in poppy seeds last. Mix salad and add dressing just before serving.
