Baked Zucchini

6 medium zucchini

½ onion chopped

4 celery stalks chopped

¼ cup chopped parsley

2 TBS olive oil

1 ½ cups cottage cheese

1/3 cup buttermilk

2 eggs beaten

½ tsp salt

1/8 tsp pepper

¼ tsp garlic powder

1 tsp oregano

½ cup grated mozzarella cheese and /or

¼ cup grated parmesan cheese

whole wheat bread crumbs

Sauté onion & celery in olive oil. Stir together with cottage cheese, buttermilk, beaten eggs, seasonings, parsley and bread crumbs.

Slice zucchini in half lengthwise. Place halves, cut side up in a greased baking dish. Cover and bake at 350 degrees, about 15 minutes, until partially done. Spread with cottage cheese mixture and grated cheese. Bake again, uncovered, until done, about 15 more minutes.
