Zucchini Bread

2 cups sugar

3 cups flour

1 tsp salt

1 tsp cinnamon

1 tsp soda

¼ tsp baking powder

2 eggs

1-cup canola oil

2 tsp vanilla

2 cups shredded raw zucchini

(Can be peeled or unpeeled)

Mix all ingredients well. Pour into 2 greased and

lightly floured loaf pans.

Bake at 350 degrees for 60 minutes.
