Black Bean Salad or Salsa

1-2 cans black beans-rinsed and drained

Chopped green onion

Chopped green pepper

Chopped fresh tomato (can use canned diced tomatoes)

Chopped parsley or cilantro

Other vegetable possibilities for add in:

Chopped broccoli, corn, zucchini, cucumber

Dressing: combine ingredients- adjust dressing

according to amount of salad ingredients

¼ cup rice vinegar or lemon juice

1-2 TBS. olive oil

Garlic minced

Salt & pepper
