Fiesta Banana Cake

Measure into sifter: 2 cups flour

1 tsp baking powder

1 tsp soda

¾ tsp salt

1 1/3 cup sugar

Mix and add:

½ cup shortening.

Measure into cup:

½ cup buttermilk

1 tsp vanilla

Have ready:

1 cup mashed bananas

2 eggs unbeaten

½ cup chopped nuts

Soften shortening. Sift in dry ingredients. Add ¼ cup of milk, bananas and mix. Beat 2 minutes. Add eggs, nuts, and rest of milk. Beat 1 minute. Bake at 375 degrees for 25 minutes. Cool. Whip one cup of heavy cream. Peel and cut 3 ripe bananas crosswise in ¼” slices. Fold chopped marachino cherries into ½ of cream. Spread on bottom layer. Arrange ½ of banana slices on top. Spread 2nd layer with remaining cream. Decorate with slices of cherries or white butter frosting or

butterscotch frosting

1 cup brown sugar

3 TB shortening

2 TB margrine

1/3 cup canned milk

Boil 3 minutes. Add powdered sugar to spread consistently.
