Blackened Chicken with Pasta

3-4 chicken breasts

cajun season

8 oz penne or other tube pasta

1 14 oz can diced tomatoes with garlic and onion (or something similar)

1 tsp dried basil

¾ cup whipping cream

1/3 cup parmesan cheese, grated

In a skillet brown chicken sprinkled with Cajun season. ( I use about 1T of Cajun season)

Cook until done and remove from pan and cut chicken across grain into thin strip slices. In a sauce pan cook canned tomatoes over medium heat until thickened, about 5 minutes. Reduce heat and add basil, cream,and parmesan cheese and then heat. Do not boil. Toss with cooked pasta and chicken strips and serve.
