Pao de queijo


(Brazilian Cheese Rolls)

2-2 ½ cup tapioca (manioc) starch

1 cup milk

½ cup margarine/butter

1 tsp. salt

1 ½ cup grated parmesan cheese

2 eggs

Preheat oven to 350 degrees. Bring milk, salt and margarine to a boil. Remove from heat. Slowly add starch stirring until thoroughly mixed. Put mixture into a new bowl. Cool. Add eggs and knead well. Add grated cheese and keep kneading until dough is smooth. Grease hands with oil and roll dough into 2 inch balls. Wash hands once in a while if necessary. Place the balls on a greased baking sheet. Bake for 20 minutes.
