Fancy Gap (N.C.) Apple Cake


Grandma Norma Hiatt

A delicious (not spiced) apple cake from North Carolina that Dan's grandma Hiatt and mom make.  It has diced apples and caramel icing, a combo that can't be beat, especially when served with a scoop of vanilla ice cream.

2 cups sugar
2 eggs
1 ¼ cup oil
3 cups flour
1 tsp salt
1 tsp baking soda
3 cups diced apples
2 tsp vanilla
1 cup walnuts, chopped (optional)
Cream sugar and eggs. Add oil. Sift flour, salt and soda. Fold into mixture. Add apples, vanilla, and nuts. (Will be real thick) Bake at 325 degrees for 40 minutes in 10x15 cookie sheet or bunt pan, greased.
Caramel Icing:
1 cup brown sugar
¼ cup margarine
10 TB cream or evaporated milk (scant ¾ cup).
Mix and let come to a boil. Boil for 3 minutes. Pour over hot cake, spread. (It will thicken as it sits.)
