Salmon Tacos

Travis and Britt Peterson

1½ cup peeled and diced mangos (2)

1 medium red sweet pepper

¼ cup thinly sliced green onion

1 jalapeno pepper diced into very small pieces

3 TB olive oil

½ tsp lime peel/lemon juice

1 TB vinegar

¼ tsp salt

¼ tsp pepper

Mix all ingredients to create taco salsa. Serve in fried corn tortillas with cooked or grilled salmon. Serve with rice.
